Soft bread rolls

Ingredients dough:  
10.000 gr Wheat flour 100%
1.500 gr Damco mix for bread rolls 15%
150 gr Salt 1.5%
500 gr Yeast 5%
ca. 5.600 gr Water 55%




Mix all ingredients and knead into a thoroughly kneaded dough. 
Divide the dough into 1,650 g pieces to make 30 rolls from each piece (55g each). Then allow the rolls to proof for 10 minutes. Divide them using a divider/moulder and shape them into dough balls. 
Brush the dough rolls with whole egg, place them on a greased baking tray and gently press them with an apple divider.
Proof the rolls for about 70 minutes and bake.

Baking time: ca. 8-9 min
Baking temp.: ca. 260°C
Quantity: 320 pieces
