Lemon mascarpone cake with candied fruit

Cake:
2.000 g Damco lemon mascarpone cake
1.000 g Butter
1.000 g Whole egg
     
Decoration:    
Frucaps ready-to-use neutral glaze
Candied fruit

 

 

 

 

Instructions for cake:
Make sure the ingredients are room temperature. Mix the butter smooth (not fluffy) with a paddle attachment. Add the rest of the ingredients and mix for about 2 minutes in 2nd gear untill smooth. This depends on the amount of batter and the speed of the machine. Fill the cake tins with approx. 450g batter and bake.

Finish:
Let the cake cool down completely and apply a thin layer of Frucaps ready-to-use neutral glaze. Then finish with candied fruits like orange strips, lemon strips, candied orange slices, etc.

Baking time: 60 min
Baking temp: 160°C
Quantity: 14 pieces
