Amarena cake

Cake batter:    
1.150 g Damco cakemix warm method
400 g Butter
500 g Whole egg
100 g Cointreau 60%
20 g Damco cold binding agent
400 g Amarena cherries

Melt the butter in the microwave until a maximum of 40°C. Mix the Damco cakemix warm method, egg and Cointreau for 2 minutes in the 2nd gear. Next, add the melted butter and mix for 2 minutes in the 1st gear.

Wash the Amarena cherries with water and let all the excess water drip off. Cut the cherries into eights and mix them through the cake batter.

Devide the cake batter between small baking pans (450g) and bake. After the cakes have cooled down, dip them in Souplesse blueberry and add decoration.  

Baking temp.: ca. 160°C
Baking time: ca. 60 minutes
Quantity: 5 pieces
